Every year around Christmas, my family gets together for “chocolate day.” This is where they all come over to our house and we make chocolate covered Oreos, raisins, almonds, chips,… you name it and we have probably made it!
My favorite thing to make is homemade thin mints, made with crackers (Ritz crackers or similar)! Sounds crazy, I know. But I swear to you that it tastes just like a thin mint and you would never know it was a cracker (if I didn’t just tell you!)
I wanted to share the recipe now so that you have plenty of time to get the ingredients to try them this year! Enjoy…
Homemade Thin Mints Recipe
Ingredients:
- Andes Mints- We have used both Andes Creme De Menthe Baking Chips as well as actual Andes Mints and they both work well.
- Buttery Round Crackers such as a Ritz cracker. We have also used these from Aldi and they work well.
- Sprinkles (optional)
Other Supplies:
- Wax Paper
- Some way to melt chocolate. You can use a double boiler or warming trays similar to this one. For the warming trays, we put the chocolate in aluminum loaf pans and then tent with foil to get the chocolate to melt.
- A metal paper clip- You are probably confused by this one. A paper clip for making cookies? Hear me out… We washed a new paper clip to use because a paper clip will fit in one of the holes of the crackers and then you have a nice way to get the cracker completely covered with chocolate. Twist the paper clip open a little and bend a hook into the end. Below are a few pictures so you can see how we did it.
Directions:
- Melt the Andes Mint chocolate
- Put your paper clip through one of the holes in the crackers
- Dip the cracker in the Andes Mint chocolate
- Place on Wax Paper
- Add sprinkles (optional)
- Let them cool on the counter or place them in the freezer to speed it up.
